Our cocoa is non mass balance Fairtrade - what does this mean? Quite simply this is the process where a cocoa purchaser or producer can obtain fair trade cocoa certification for the final product, in this case cocoa powder, even if the fair trade cocoa is mixed with conventional non certified cocoa at the processing plant. This is something we see far too often with Fairtrade certified cocoa. So, if you purchase this you can rest assured that the entire batch is 100% Fairtrade, no excuses!

Grown by small farmer co-ops

This organic alkalised cocoa powder is made from cocoa grown in the Dominican Republic, on the Caribbean island of Hispaniola. When farmers organize into co-ops they gain crucial market access, run their business democratically, and decide together how to invest in their communities. Yacao Cocoa Association, in the Dominican Republic, was founded in 1999 in Yamas region to promote organic cocoa growing and to generate basic income for farmers. Yacao is now established as a reliable local enterprise and exporter with social responsibility. Grown from 84 families in 2004 to more than 1300 affiliated families in 2008. Nowadays more 10 farmer associations have been set up, and 4 processing centres have been established to enhance service quality to farmers and buyers. Today the organisation employs 30 permanent and up to 60 seasonal workers.

Roasting Block Goes Here

At our solar-powered roastery in West Bridgewater, Massachusetts, our worker-owner team batch roasts and conducts production cuppings daily to bring out the best characteristics in each harvest. With four primary roast levels, we think there’s a favorite here for everyone. Obviously this needs to be updated for UK roasting.

Medium Roast: expect the unique citrus, nutty, fruity, or floral notes of each coffee to shine through.

Full City Roast: you’ll get a bit more of the caramel flavor that comes from the roasting process.

Vienna Roast: starts to bring the smoky aroma and smooth and rich body of a darker roast.

French Roast: with the natural oils fully expressed, it’s an intensely dark and smoky experience akin to dark chocolate.
